Egg muffins from meal prep last night. Mixed 12 eggs with 2 cups of fresh spinach (I shredded it then measured it) and a couple spoon fills of garlic, poured the mixture into a muffin tin (see previous prep picture), cracked pepper over the top and baked at 400 for 30 mins. Breakfast is ready and on the go as I bail out the door at 6am everyday this week to train clients... thus giving me an extra 15 mins of beauty sleep.

Doc gave me the OK to start training again tomorrow. Beyond pumped, because 3.5 weeks off has pretty much made me go insane. Time to get these shoulders back... Pre surgery body, HERE I COME. Game on!

#throwbackthursday... a couple months ago, pre-surgery when I was still in shape haha. Incorporated light cardio and body weight leg movements this week. I'm going insane not being able to train and I recently lost some motivation... but seeing all my photos from the shoot with @jcargetsinger makes me excited to get back to it and look better than ever. ARTICHOKE!! One of my favorites. I had never tried roasting artichoke before (I usually steam them) so I decided to give it a whirl. Chopped the top third off (you don't eat that part anyway) then sprayed them with avocado oil and stuffed them with garlic. Wrapped them in foil then roasted them in the oven at 450 for about an hour. Delicious. Artichokes have more antioxidants than any other vegetable. Eat up.

Making my momma dinner and organic sweet pot fries are on the menu per her request. Chopped these suckers up like fries, spayed them with the coconut oil spray, then topped then with the AMAZEBALLS Vietnamese Saigon Cassia Cinnamon that @thebettyrocker got me. Sweet potatoes and yams are not only fat free but are extremely high in fiber and rich in vitamin A. And they are definitely my favorite way to carb up.

All stocked up for meal prepping on Sunday night! Chicken, tilapia, cage free organic eggs, canned tuna, lean ground beef, and bacon for protein. Lots of lower sugar fruits for green smoothies. Lots of veggies. Sweet potatoes for carbs. Greek yogurt that @travisthetrainer says I can't have. Almond milk and almond butter (I only bought the almond butter to strengthen my will power; this week's goal is to not even open the shit.... we'll see). Boom. Love it when momma Cags comes to visit.

πŸ’œπŸ’šβ€ Ladies and gentlemen we have a special treat for you today. I told you we'd have a special person make us our own custom made #mealprepmondays smoothie and it's here my friends. Let's give a big THANK YOU to @simplegreensmoothies for not only making us a smoothie but also made it so that we can PREP IT FOR THE WEEK. 🚰HERE'S HOW🚰 @simplegreensmoothies pre-packed fruit portions into mason jars and kept them frozen. You could also let defrost in fridge for the week for a sweeter taste. This follows her 60/40 formula of 3 cups fruit + 2 cups leafy greens. You can use anything from melon to pineapples, strawberries, grapes, blueberries and the list goes on. So each mason jar has 3 cups of fruit. Now all you have to to do is add 2 cups baby spinach or kale, and 1-2 cups of water, coconut water or almond milk. Throw in the blender and now you've got yourself an excellent way to start your day. My dad had cancer a few years ago and after he had some irregular blood work a year later I studied juicing non stop read so many books and watched so many documentaries and up to this date 5 years later we still swear by organic veggie and fruit juices. When I see something interesting at a farmers market or produce section, I'll pick it up, buy it, THEN figure out how to make it when I get home. If you sit there and contemplate wether or not you'll be able to use it, you'll end up NOT buying it. C'mon don't be scared. Try something new. Surprise yourself. 😱
