HOMEMADE MUESLI from @kayla_itsines website so gona try this when I have the strength. 2 cups of rolled oats 1/2 cup chopped almonds 1/2 cup puffed quinoa 1/4 cup pumpkin seeds 1/4 cup sunflower seeds 1 tbsp honey 1 tbsp pure maple syrup 1 tbsp melted coconut oil 1 tsp vanilla extract 1 small pinch of salt 1/2 tsp cinnamon Directions 1. Preheat your oven to 150C (300F). 2. Mix all the ingredients together in a bowl, making sure all the dry ingredients are all well coated with the wet ingredients. 3. Spread the mixture into a very thin layer on a baking tray lined with baking paper. 4. Bake for 10-15 minutes until golden or to your liking. 5. Cool and store in a air tight container or glass jar. Store in a cool dry place for up to two weeks. Cilantro Lime Chicken Recipe By @AddAPinch 4-6 skinless, boneless chicken breasts 3 tablespoons fresh cilantro, chopped 2 limes, zest and juice or 4 tablespoons lime juice 1 lime, sliced 2 tablespoons olive oil ½ teaspoon salt ¼ teaspoon ground cumin pinch cayenne pepper (optional) Preheat grill or oven to 375º F. Place chicken into a large baking dish, about a 9x13. Stir together cilantro, lime zest and juice, olive oil, salt, cumin, and cayenne pepper, if using. Pour over chicken. Top with lime slices, cover with plastic wrap and refrigerate for 5 minutes. Remove chicken from marinade and place onto grill or in oven for 20 minutes. Grill or bake until chicken registers 165º F when checked with an internal temperature probe. Remove from oven and serve warm.

Peanut Butter Cup Overnight Oats By @chelseasmessyapron 2 and 1/2 tbsp. creamy peanut butter 1/2 tsp. vanilla extract Pinch of salt 1/4 cup low-fat vanilla yogurt 1/3 cup unsweetened almond milk, or sub 1/2 cup old fashioned oats 1/2 - 1 tbsp. cocoa powder (or sub sugar-free chocolate pudding mix, dry) 1/2 tsp. truvia, or sub another sweetener Optional: dark chocolate chips In a small bowl, combine the peanut butter, vanilla extract, and salt. Microwave for 10 seconds, stir for 10 seconds, and microwave for 10 more seconds. Add in the yogurt, milk, oats, cocoa powder or dry pudding mix, and sweetener. Stir well and make sure the peanut butter is mashed in thoroughly. If desired, add in dark chocolate chips. Transfer the mixture into a small jar or sealed container. Place in the fridge for at least an hour or until oats are completely softened. Store overnight oats in the fridge for up to 3 days.

Spicy Parmesan Shrimp Pasta @cremedelacrumb visit her blog for more great recipes, link in her bio . โ…“ cup olive oil 4 teaspoons minced garlic 2 teaspoons soy sauce 2 tablespoon brown sugar 1-2 pounds medium or large deveined, peeled shrimp ½ teaspoon red pepper flakes (or to taste) ¼ cup shredded parmesan cheese ¼ cup grated parmesan cheese topping 8 ounces penne noodles, cooked Whisk together olive oil, garlic, soy sauce, and brown sugar. Pour into a zip lock bag and add shrimp. Seal bag and toss to coat. Allow to marinated in fridge for 30 minutes before preparing dish or overnight. Prepare penne noodles according to the package instructions. Drain marinade and add shrimp to a large preheated pan or skillet. Saute over medium high heat 3-4 minutes until shrimp have turned pink. Add red pepper flakes, shredded parmesan cheese, grated parmesan cheese topping, and cooked noodles. Cook 3-4 minutes longer stirring throughout until shrimp and noodles are coated with cheese. Season with salt and pepper to taste. Garnish with sliced green onions if desired.

By @alexaschirm please visit blog, link in her profile . 2 lbs chicken tenders, trimmed of excess fat ¼ cup tapioca starch 2 Tbsp coconut oil ½ cup Tamari sauce 2 tsp each rice vinegar, sesame oil, sesame seeds, and hot sauce 2 cloves garlic, minced 3-4 Tbsp honey ½ tsp ground ginger, ¾ tsp cinnamon, ¼ tsp cloves 1 tsp red wine vinegar Salad: Chopped kale, green and red cabbage, Green onions, sliced, Red & Orange Bell Pepper, cut into matchsticks, Cilantro, Sunflower seeds In a small saucepan add tamari sauce, rice vinegar, minced garlic, sesame oil, honey, hot sauce, ginger, cinnamon, cloves and red wine vinegar. Heat over medium heat until reduced and thickened. Meanwhile, trim chicken and cut into tenders (if not already done). Heat a large skillet over medium heat and add coconut oil. Coat chicken on both sides with tapioca starch and place in hot skillet. Cook until golden brown 3-5 minutes and flip, repeat until chicken is cooked through. Remove and place on a plate and coat with sauce and sprinkle with sesame seeds. Add salad ingredients to a bowl, cabbage & kale mixture, red peppers, green onions and sunflower seeds. Top with chicken and additional sauce.

Cover and turn heat down to low; allow the oats to cook for 20 minutes. Remove lid and stir in chopped apples and maple syrup. Continue cooking, uncovered for 10 minutes, or until oats reach your desired texture. Serve in a bowl or hollowed out apple and garnish with walnuts, fresh chopped apples and a drizzle of maple syrup.

Cilantro Lime Shrimp By @nevrenoughthyme check her blog for more amazing recipes, link in her profile 1 tblsp. butter 1 tblsp. olive oil 2 cloves garlic, minced 1 medium onion, chopped 1 jalapeno, finely chopped ¼ tsp. red pepper flakes ½ tsp. Mexican oregano 2 roma tomatoes, chopped 1 lime, zest and juice ½ tsp. salt ½ tsp. black pepper 1 pound shrimp, split and deveined 2 tblsp. chopped cilantro Melt the butter and oil in a heavy skillet over medium-high heat. Add the garlic, onion and jalapeño. Cook, stirring until the onion begins to wilt, approximately 3 minutes. Add the red pepper flakes and oregano. Continue cooking until the onion becomes translucent, approximately 3 additional minutes. Add the tomatoes. Cook, stirring occasionally, until the tomatoes are soft. Add the shrimp, zest and lime juice, salt and black pepper. Cook until the shrimp are just opaque. Be careful not to overcook. Remove the pan from the heat and stir in the cilantro.

For the Garlic Tzatziki: 1½ cups greek yogurt, 4 cloves garlic 1 small cucumber, peeled and chopped 2 teaspoons olive oil, Juice of ½ lemon 2 tablespoons dill, Kosher salt, to taste For the Zucchini, Feta, and Spinach Fritters: 2 medium zucchini, grated 3 handfuls baby spinach, chopped ½ cup feta cheese, crumbled ¼ cup minced fresh herbs (dil, mint, and oregano are my favorites to use here) 3 large eggs, lightly beaten 2 scallions, minced, 2 cloves garlic, minced โ…“ cup flour of choice ½ teaspoon baking powder Salt and black pepper, to taste Olive oil, for frying In a blender or food processor, combine all of the tzatziki ingredients. Blend until smooth. Refrigerate until ready to use. Place the grated zucchini in a fine mesh strainer over a bowl. Sprinkle with 1 teaspoon salt to draw out the liquid and let sit for 10-15 minutes. Then, wring all of the liquid out using your hands and set aside. In a large bowl, combine the zucchini, spinach, feta, herbs, eggs, scallions, and garlic. Stir to mix well. Then, sprinkle in the flour and baking powder, a bit at a time, until it all is incorporated and holding together. Heat about ¼ cup olive oil in a skillet over medium heat. Once warmed, drop 3 scoops of batter into the skillet. (Aim for about 3 tablespoons worth of batter, each) After about 30 seconds, flatten them out a by pressing them down gently with a spatula. Pan fry for about 3 minutes, and then flip to fry the other side for an additional 3 minutes, or until golden brown. Place the fritters on a paper towel lined plate to absorb excess oil, and serve warm with the Garlic Tzatziki!

Citrus Chicken Quinoa Salad By @sallysbakeblogโค๏ธ@sallysbakeblog Please visit her blog for more great recipes, link in her profile . 1 and 1/2 cups cooked quinoa 2 Tablespoons olive oil 1 pound skinless boneless chicken breast, chopped into 1-inch pieces 2 cloves roasted garlic, chopped 1/2 teaspoon smoked paprika 1/2 teaspoon salt 2 large oranges, peeled and segmented 1 ripe avocado, peeled and cubed DRESSING 1/4 cup fresh lime juice 1/3 cup chopped fresh cilantro (packed)* 1 Tablespoon fresh orange juice* 1 Tablespoon olive oil 1 Tablespoon honey Cook quinoa according to package directions or use my directions - my recipe will make 2-3 cups, more than what you will use. But leftovers are great! Transfer cooked quinoa to a large bowl and let cool. Pour olive oil into a large skillet over medium heat. Add chicken and roasted garlic, stirring it all around to coat with oil. Sprinkle with smoked paprika and salt. Stir and cook until chicken is done, about 8 minutes. Add cooked chicken, oranges, and avocado to the quinoa. Stir to combine. Set aside. For the dressing: whisk all of the dressing ingredients together. Pour over salad and toss to coat everything evenly. Serve immediately. Leftovers keep well in the refrigerator for 4-5 days.

SWEET POTATO RAVIOLI WITH KALE PESTO By @thefirstmess Visit the blog, link in her profile for more. dough of choice or visit blog for homemade recipe used filling 1 medium sweet potato, roasted or steamed until very soft 1/2 cup pine nuts 1 clove garlic, smashed juice of 1 lemon salt and pepper kale pesto: 1/2 bunch of kale (about 4 stalks), leaves removed 2 cloves garlic, smashed 1/2 cup pine nuts 1/3 cup extra virgin olive oil salt and pepper Make the filling: scoop sweet potato flesh into the bowl of a food processor. Add the pine nuts, garlic, lemon juice, salt and pepper. Pulse 10 times to break up the nuts. Scrape down the sides and turn it onto low for about 30 seconds until smooth and homogenous. Cover and set aside. Make the pesto: place the kale leaves, pine nuts, garlic and 2 tbsp of the olive oil into the food processor. Pulse 10-15 times to break up the nuts and chop the greens a bit. Scrape down the sides. Put the food processor on high and drizzle the remaining oil into the feed tube until a smooth paste is achieved. Season to taste and set aside. Make ravioli: cut dough sheets into 2 inch squares. Place a little bowl of water near your working area. Place a scant tablespoon of sweet potato in the middle of the square. Dampen two sides of the pasta square with your finger and fold the opposite side of the square over, pushing down on the seams to form a seal. Push down on edges with a fork to strengthen the seal. Repeat until dough/filling is used up. Lightly dust the shaped ravioli with flour, place in a dish and cover loosely with a tea towel until ready to cook. Cook/plate ravioli: boil a large pot of water with a solid glug of olive oil in it. Place about 10 raviolis in the water at a time. When they all start bobbing at the surface (about 2-3 minutes), remove from the water with a slotted spoon. To serve: place a good schmear of kale pesto on your serving plate, place raviolis on top, put a few dabs more of pesto on top and a sprinkle of toasted pine nuts.
