Lay the pheasants in the pan, cook until golden-brown in colour (about 3-5 minutes) with native coconut oil on the leg sides. Turn the pheasants onto their breast side to colour for a further 2-3 minutes. Season with salt and pepper; fill it with apples, cabbage, nuts, olives and tons of local herbs. Transfer to the oven and cook for 30 minutes, turning halfway through cooking time. To check the pheasant is correctly cooked, you can use a meat thermometer – the breast temperature for a cock pheasant should reach 63C/145F and for a hen 60C/140F. La perdrix rouge est un Galliforme comme la poule domestique, la caille, les faisans. Elle se distingue de la perdrix grise par le bec et les pattes rouges et de la perdrix bartavelle par la présence d'un collier noir diffusant vers la poitrine en taches noires et isolées. Elle pèse de 350 à 600 g et le plumage des deux est identique. Les coqs sont plus lourds que les poules et possèdent des ergots aux pattes, rarement présents chez les poules. la perdrix rouge vit en couple et pond en moyenne 10 à 13 oeufs dans un nid constitué à même le sol. Once the cheese mass is transferred into the järb, a lid is placed on top and heavy weigths press squeezes the rest of the whey from the cheese grains. The warm cheese will now be covered for not cooling down to fast. After four-to-five hours, the new cheese is wrapped in a linen cloth and submerged in salt water. During this part of the process, from now one side of the cheese is hand-salted each morning, then turned over and massaged each afternoon. Once the cheese rind has reached a level of maturity, the cheese is smear-ripened with a mixture called morge which produces its strong flavor and pale yellow rind. The bacteria culture are here in Switzerland basically all from the same supplier, but the cheese is tasting differently. The milk from each individual region has its own typical, aromatic taste and even varies from one year to another. This comes from the Alpine herbs on which the cows graze that grow differently in each area. GESCHMORTE ROTE UND GRAUE REBHUEHNER, FASAN IN ERDNUSS- UND GRANATAPFELSAUCE, by Limonrimon http://www.limonrimon.ch/category/zutaten/chicken/  Im Originalrezept wird die Sauce mit Walnüssen gekocht, ich hab die Vor-Samichlaus Erdnüsse verwertet.  Und es war sehr lecker. Also sehr. Diese Kombination von Nüssen mit der säuerlich-fruchtigen Granatapfelmelasse..hmmm.  Ich mag ja Schmorgerichte und Eintöpfe sowieso. Die kann man nämlich prima vorbereiten und sie schmecken beim 4. Mal Aufwärmen noch ein bisschen besser als am Vortag. etwas Öl 1 Zwiebel, gehackt 1 TL Mehl ziemlich viele Erdnüsse, fein gehackt (im Mörser oder Mixer) etwas gehackte Haselnüsse 4-6 Pouletstücke mit Knochen, gehäutet Meersalz Pfeffer 1 EL Zucker 200 ml Granatapfelmelasse 1 Granatapfel zum Garnieren Öl in einer Bratpfanne erhitzen und Zwiebeln darin anschwitzen. Poulet mit Salz und Pfeffer würzen und gut anbraten. Pfanne vom Herd nehmen. In einer zweiten hohen Bratpfanne das Mehl rösten und dann die Nüsse dazu geben und auch rösten. Achtung: nicht zu heiss, die Nüsse werden sonst rasch schwarz. 0.5 Liter kaltes Wasser dazu giessen und aufkochen. Zudecken und bei geringer Hitze köcheln lassen. Nach ca. 45 Minuten setzt sich das Nussöl an der Oberfläche ab. Erst dann Zucker und Granatapfelsirup hinzugeben und gut verrühren. Pouletstücke in die Sauce geben und noch einmal 1-2 Std. köcheln lassen. Mit Granatapfelkernen garnieren und mit Reis servieren. Unbedingt Resten übrig lassen, damit man das Gericht noch mal aufwärmen kann. Und nochmal. chamois yearling liver with red salvia The chamois is a sturdy, nimble animal that has remarkable leaping ability. Its specially adapted hooves have soft elastic soles to keep the animal from slipping. These hooves allow the chamois to grip the steep mountain slopes of its range. During spring and fall the chamois lives in alpine forests, just above the tree line. The chamois does not live on mountain tops, but it may move higher up the mountain in summer.  In winter it moves down to slopes as low as 1,640 feet and settles in the forest, where food is more plentiful.  Females and young usually live in small groups on their own.  However, in winter they may join with others groups to form a herd of up to 100 animals. This blood trail is also a Rorschach test. Wild garlic has many peculiar identities - 'bear's garlic', 'devil's garlic', 'gypsy's onions' and 'stinking Jenny' are just some of them. It's no surprise that this seasonal ingredient is called so many names - it gives off an incredibly pungent smell in the wild. Unlike common cultivated garlic, it's the leaves that are eaten rather than the bulbs. The taste is more delicate too, similar to the flavour of chives. This is one you're going to find in your deciduous woodland (among the bluebells) rather than the supermarket. It's best harvested in April or May before the flowers appear.The shape of the leaves are similar to some other inedible plants, so ensure identification by crushing some of the leaves in your hand.
